Tuna Patties

3 cans tuna
2 eggs (beaten)
1 cup mashed potatoes
¾ dry bread crumbs or smashed crackers
¼ cup onions

Mix all ingredients together and form in to patties.  Cook in pan or on skillet, med. Heat, 5 minutes on each side or golden brown.

I am NOT a tuna fan, but these are good.  4 out of 5 kids liked them as well.  JenW

Jambalya ala Capriotti

Here is one of the Capriotti favorites:

1lb Italian Sausage
4-5 stalks celery chopped
2-3 bell peppers (personal preference for red/yellow/orange/green) chopped
1 sm/med onion diced
1 T Creole seasoning
1 pint or 1 can of chicken broth
1-2 cups rice (white or brown)

Prep time: 15-30 minutes chopping peppers/onion/celery
Cook time: 1 hr, sometimes more if you use brown rice
Serving size 1 cup, makes 8-12 servings depending on quantity of celery/peppers/rice used.

Directions: Brown the sausage in olive oil in a deep sauce pan or wok. Add chopped peppers, celery, and diced onion in the pan with the creole seasoning until celery is soft - stirring frequently. Once celery is soft, create a "bowl" in the pan, add rice in the "bowl". Add chicken broth and additional water until rice is covered. Cover pan with lid, cook until rice is soft - stirring less frequently. Serve.


I'll send more when I have a chance, I've got a few that I've come up with that are quite popular with my family of 6. Even the smaller kids enjoy them.

Cookbook

Instead of sharing a recipe, I'd like to share a cookbook I'm reading from the library. The Rice Diet Cookbook has delicious looking recipes for cooking with veggies, fruit, grains, with low salt, and no or low sugar added. For example, a simple strawberry pineapple jam without any sugar that takes only a couple minutes to make and crockpot oatmeal. Some of these recipes might be good for specialty diets like gluten free. It has 3 weeks of menus for breakfast, lunch, and dinner. Ruth Ann

Making dinner easier and faster

Just over a year ago, I invested in an electric pressure cooker. It has been worth every cent. Just to give some examples of how much time this little beauty saves: mashed potatoes 2-3 min. + pressure build, dry beans 23-30 minutes (versus hours of soaking), brown rice 15 minutes. The food tastes every bit as good as when it is cooked slower, some tastes better. Jen W.

Julie's Pumpkin Seed Math

Here's some ways to do math with pumpkin seeds.
  • Pumpkin seeds are lots of fun to cook and you can really enjoy measuring them and the ingredients in the recipe.
  • I get out my balance and have them count equal amounts in the sides and talk about mass.
  • Practice awareness of volume by letting them measure equal amounts and put them in different containers (bags, bottles, bowls). It helps them see amount is not dependent on container.
  • See how high a younger child can count. Who has more seeds?
  • Have an estimation contest. How many seeds would they estimate is in the pumpkin? How close did they get?
  • Multiplication and division or addition and subtraction. We have so many seeds, if I put ten piles of ten, how many do I have? We have 25 seeds and 5 people need some how many will everyone get? If I have 15 seeds and you take 3 how many do I have left? Let them use the seeds for the visual aid.

Julie's Pumpkin Seeds

2 cups unwashed pumpkin seeds
1/2 tsp Worcestershire Sauce
2 Tbs melted butter
1 1/2 tsp salt

Mix in large bowl. Spread on cookie sheet. Bake approximately 2 hours in a 250 degree oven until dry and golden brown. Cool and enjoy!

Herb Substitutions

  • Basil=Oregano or thyme

Yellow Lentils With Spinach and Ginger

Serves 4

1 teaspoon white or black sesame seeds
1 tablespoon olive oil
1 shallot, minced
1 teaspoon ground ginger
1/2 teaspoon curry powder
1/2 teaspoon ground turmeric
1 cup yellow lentils, picked over, rinsed and drained
1 1/2 cups vegetable stock, chicken stock or broth
1/2 cup light coconut milk
2 cups baby spinach leaves, stemmed and chopped, or 1 cup frozen chopped spinach, thawed
1/2 teaspoon salt
1 tablespoon chopped fresh cilantro (fresh coriander)

Directions

1. Wash hands.

2. Toast only the white sesame seeds before using. Place the sesame seeds in a small, dry saute or frying pan over medium heat. Cook briefly, shaking the pan often and watching carefully to prevent burning. Remove the seeds from the pan as soon as they begin to turn brown. Set aside.

3. In a large saucepan, heat the olive oil over medium heat. Add the shallot, ginger, curry powder and turmeric and cook, stirring, until the spices are fragrant, about 1 minute.

4. Add the lentils, stock and coconut milk. Raise the heat to medium-high and bring to a boil. Reduce the heat to low, cover partially, and simmer until the lentils are tender but still firm, about 12 minutes. The mixture should be brothy; add a little water if needed.

5. Stir in the spinach, cover and simmer for about 3 minutes longer. The lentils should still hold their shape. Uncover and stir in the salt. Serve hot, garnished with the cilantro and toasted white or untoasted black sesame seeds.

Slow Cooker Easy Italian Chicken

Serves 4

2 pounds boneless skinless chicken breasts
1 can cream of mushroom soup (reduced fat and reduced sodium)
1 envelope Italian salad dressing seasoning
1 package fresh sliced mushrooms
½ cup sour cream, fat free
Homemade style noodles or rice
Salt & pepper to taste

Directions
1. Wash hands.
2. Cut chicken into thick slices. Layer chicken, soup, dressing mix, mushrooms, and salt and pepper in a slow cooker. Do not stir. Cook on high for 3-4 hours. Add sour cream and stir. Serve over hot noodles or rice.

Serve with steamed asparagus, broccoli or green beans

Fried Ice Cream

Serves 8

¾ cup brown sugar
1 cup butter
2 cup rice krispies cereal
1 cup coconut
¾-1 cup chopped nuts
½ gallon of vanilla ice cream

Caramel sauce
Directions

1. Wash hands.

2. In a saucepan, melt brown sugar in butter. Bring to slight bubble for 1 minute and remove from heat.

3. Add rice krispies, coconut and nuts. Press mixture, reserving ¼ of mixture, into 9x13 baking dish. Cut and spread vanilla ice cream. Top with remaining ¼ of mixture. Place in freezer.

4. Before serving drizzle with caramel sauce.


Options

Reduce sugar to ½ cup
Reduce butter to ½ - ¾ cup
Omit nuts
Use reduced fat ice cream

Minted Raspberry Lemonade

Makes 1 gallon

3 cups freshly squeezed lemon juice (12 to 15) lemons
2 teaspoons finely chopped fresh mint
1 cup raspberries, mashed with a fork
1-½ cups sugar
12 cups water

Directions
1. Wash hands.
2. Stir together all the ingredients until the sugar dissolves. Serve well-chilled or over ice. Pour into pitchers and garnish with fresh whole raspberries, sliced lemons, and mint leaves, if desired.

Options:
Omit raspberries and mint leaves

Rolo Cookies

Makes 4 dozen

1 cup margarine
1 cup sugar
1 cup firmly packed brown sugar
¾ cup unsweetened cocoa
1 teaspoon baking soda
1 cup pecans
2 teaspoons vanilla
2 eggs
2-½ cups flour
1 cup sugar
48 unwrapped rolos
4 ounces vanilla-flavored candy coating (if desired) or white chocolate chips

Directions

1. Wash hands.
2. In large bowl, combine 1-cup sugar, brown sugar, and margarine; beat until light and fluffy. Add vanilla and eggs; blend well. Lightly spoon flour into measuring cup; level off.
3. In small bowl, combine flour, cocoa, and baking soda; mix well. Add to sugar mixture; blend well. Stir in 1/2 cup of the pecans. Cover with plastic wrap; refrigerate 30 minutes for easier handling.
4. Heat oven to 375°F. For each cookie, with floured hands, shape about 1 tablespoon of dough around 1 rolo, covering completely.
5. In small bowl, combine remaining ½ cup pecans and 1 tablespoon sugar.
Press one side of each ball into pecan mixture. Place, hot side up, 2 inches apart on ungreased cookie sheets. Bake 375°F for 7-10 minutes or until set and slightly cracked. Cool 2 minutes; remove from cookie sheets. Cool 15 minutes or until completely cooked.
6. In small saucepan, melt candy coating or white chocolate chips over low heat, stirring constantly until smooth. Drizzle over cooled cookies.


Options:
Reduce butter to ½ cup
Reduce brown sugar to ½ or ¾ cup
Reduce pecans to ½ cup

Asian Lettuce Wraps

Serves 4

Sauce

1/3 cup orange juice
1 tablespoon sugar
1 tablespoon rice vinegar
¼ teaspoon sesame oil
¼ teaspoon crushed red pepper flakes

Wraps

½ cup uncooked brown rice
8 ounces super lean ground beef
2 teaspoons minced garlic
2 teaspoons minced ginger
1 medium red pepper cut in strips
6 scallions, thinly sliced (½ cup)
2 tablespoons hoisin sauce
8 green-leaf lettuce leaves, washed

Directions

1. Wash hands.

2. Sauce: whisk ingredients in small bowl; set aside so flavors blend.

3. Wraps:

a. make rice according package

b. Meanwhile, cook beef, garlic, and ginger in large nonstick skillet over medium-high heat for 3 minutes. Add red pepper strips; cook 1 minute more until heated.

c. Remove from heat; stir in scallions and hoisin sauce

4. Divide rice; then beef mixture among lettuce leaves. Drizzle sauce on top.

Pumpkin Bread That Won't Hurt Your Diet

1 Carrot Cake Mix
1 15 oz can of Libby Pumpkin Pie Mix
1 bag of chocolate chips

Mix all ingredients together in a bowel until cake mix is fully dissolved. Bake at 350 degrees for 20-30 minutes. Can be used to make pumpkin cookies, pumpkin bread, and also goes great with served with vanilla ice cream.

Enjoy!

Pizza Crust

1 pkg. dry yeast
1 1/2 c. warm water
3 1/2 to 4 c. flour
1/2 tsp. salt

Sprinkle yeast in warm water. Add flour and salt: knead 10 minutes. Rise until double in size. Heat oven to 450 degrees and bake 15-20 minutes.

Homemade Root Beer

5 gal water
1 bottle of root beer extract
4 1/2 lbs of sugar
5 lbs dry ice
Mix water, extract and sugar until the sugar is disolved.
Add dry ice and let sit for at least 20 minutes.
Be sure to leave lid off after adding the dry ice.

Maritza's Meatball Sauce

1/4 cup mustard
1/2 cup grape jelly

Place in pan and warm until completed mixed.
Drizzle over meatballs.
