Rolo Cookies
Makes 4 dozen
1 cup margarine
1 cup sugar
1 cup firmly packed brown sugar
¾ cup unsweetened cocoa
1 teaspoon baking soda
1 cup pecans
2 teaspoons vanilla
2 eggs
2-½ cups flour
1 cup sugar
48 unwrapped rolos
4 ounces vanilla-flavored candy coating (if desired) or white chocolate chips
Directions
1. Wash hands.
2. In large bowl, combine 1-cup sugar, brown sugar, and margarine; beat until light and fluffy. Add vanilla and eggs; blend well. Lightly spoon flour into measuring cup; level off.
3. In small bowl, combine flour, cocoa, and baking soda; mix well. Add to sugar mixture; blend well. Stir in 1/2 cup of the pecans. Cover with plastic wrap; refrigerate 30 minutes for easier handling.
4. Heat oven to 375°F. For each cookie, with floured hands, shape about 1 tablespoon of dough around 1 rolo, covering completely.
5. In small bowl, combine remaining ½ cup pecans and 1 tablespoon sugar.
Press one side of each ball into pecan mixture. Place, hot side up, 2 inches apart on ungreased cookie sheets. Bake 375°F for 7-10 minutes or until set and slightly cracked. Cool 2 minutes; remove from cookie sheets. Cool 15 minutes or until completely cooked.
6. In small saucepan, melt candy coating or white chocolate chips over low heat, stirring constantly until smooth. Drizzle over cooled cookies.
Options:
Reduce butter to ½ cup
Reduce brown sugar to ½ or ¾ cup
Reduce pecans to ½ cup
